Black beans a la Jenny. I've been meaning to post this one for I believe it was really, really tasty.
You soak them overnight, boil them till tender (no salt) only laurel leaves while toss frying the onion, green pepper, tons of garlic and parsley.
This time I experimented with three different kinds of meat. Entrecosto, entremeada and regular beef. Toss fry as well and add salt and pepper. Mix meat with the beans, add olive oil y mas nada! let those ingredients simmer for quite a while until you see the black liquid is now a thick sauce.
Serve this sauce in tiny glasses with 'caipirinha', vodka, gin or rhum to get your guests ready for lunch and have a wonderful black bean's dish for whatever meat you are serving................
Freeze leftovers and defrost next time you want to have TACOS................
